Beer Butt Chicken



Serves 4



A fun, easy and delicious way of baking chicken, and it comes out beautifully moist.

  • 1 x whole roasting chicken
  • Herbs or spices of your choice to rub over outside of chicken (see Rub Mix ingredients)
  • 1 x can beer
Rub Mix
  • 2 tblspns dried Coriander
  • 2 tspns Chilli flakes (or use 2 red chillis – seeds removed and finely chopped)
  • 2 cloves garlic – crushed (or jar variety)
  • 1 x lemon – zest and juice
  • Salt, pepper
  • 1 to 2 tblspns oil


Method



A hooded BBQ is the ideal cooking equipment for this dish. You could use a deep tall pot on a stove as well.


Rub Mix Instructions



Put the ingredients, except oil, in a bowl and mix well.
Add enough oil to combine all the ingredients into a rub mix.
(If you are at home, use a blender.)

Rub spices or a herb mix all over the chicken.
Pour a little of the beer (a good slurp) into a baking dish or on a trivet in a preheated camp oven.
Stand your can of beer in the baking dish or on the trivet and then place the chicken's butt (bottom) over the beer can so it is now standing upright, now push the chicken down over beer can. Close your BBQ hood or alfoil your camp oven so it is sealed.

Bake for approx 45 mins in the camp oven, or in an oven, or hooded BBQ and bake until cooked.
