Impossible Lemon Pie



Serves 4



  • 1/2 cup SR Flour
  • 1 cup sugar
  • 1 cup coconut
  • 4 eggs lightly beaten
  • 1/2 cup melted butter
  • 1 cup lemon juice (bottle variety is fine)


Method



Place flour into a bowl with sugar and coconut. Mix well. Add lemon juice, eggs and melted butter (allow to cool first). Pour mixture into a small baking dish or pie plate and bake in a moderate oven for 1 hour or until set. Watch carefully to ensure that it doesn’t burn.

This recipe can be baked in a Coleman stove top oven or a camp oven. If you are using a camp oven make sure that you use a trivet under your baking dish or pie plate. Your camp oven should be placed on a bed of coals away from the main fire (to avoid hot spots) and coals should be placed on the lid as well.

Serve with cream.
